Berry Recipes

Blackcurrant or Blackberries & Honey Smoothie

200g blackcurrants or blackberries
100ml apple juice
300ml natural yogurt
2 tablespoons clear honey
Remove any stalks and freeze for 2 hours of overnight to soften.
Put fruit in a blender, add other ingredients, blend till smooth.


Strawberry & Redcurrant Juice Smoothie

100g strawberries
100 g redcurrants
½ orange
 ½ teaspoon clear honey (optional)
ice cubes
spoonful of natural yogurt (optional)
Take the tops off the strawberries & stalks off the redcurrants. Peel the orange. Puree the fruit with a blender and sieve to get any pips out. Mix juice with the water and stir in honey. Add a spoonful of natural yogurt if you fancy. Pour over ice to serve.

Blackberry Cobbler

For the fruit base :
350g blackberries
100g caster sugar
½ tablespoon plain flour

Mix together to coat the berries with flour and place in a greased pie dish.

For the topping :
100g plain flour
100g caster sugar
2 teasp baking powder
100 ml milk
50 g butter melted
Mix flour and baking powder together. Mix milk and melted butter together. Slowly add the milky mixture to the floury mixture, stirring till smooth. Spoon this over the berries. Sprinkle with sugar adding a very small amount of ground nutmeg if desired. Bake for 50 -60 mins at 180C/ 350F/ Gas 4 till topping is set and pale brown. Serves 4.

Au Naturel

Any quantity of berries, blackberries, gooseberries, redcurrants, blackcurrants –gently heated till soft. Add honey to taste and when cool stir in or spoon on natural yogurt. Great on top of cereal for breakfast or for dessert.
