Broccoli Recipes

Purple Sprouting Broccoli with Pasta & Cheese Serves 4
Cost to make £3.36 for 4 generous portions = 85p per portion
Supermarket readymeal pasta bake between £1 and £2.29 per portion
450g fusilli pasta or macaroni
450 g broccoli chopped
25 g butter
35g flour
½ tsp mustard
salt & pepper
175 ml milk
150 ml yoghurt
225 g cheese

Cook pasta in boiling water, drain. Cook broccoli in salted boiling water for 3 mins, drain. In pan melt butter, add flour, mustard salt & pepper and cook for 2 mins stirring continuously. Gradually add milk and whisk till smooth. Remove from heat. Stir in yoghurt & cheese. Add sauce to pasta and mix. Fold in broccoli. Place mix in greased dish and bake for 20 mins at 180C till browned. Crumble breadcrumbs on top before baking for extra crispy top.

Purple Sprouting Broccoli Slaw

Cost to make 59p for 300g, 54p for low fat version

Supermarket coleslaw 300g = 70p - £1.25
450g broccoli chopped
1 medium onion (or red onion) finely chopped
200g carrots grated
200 g cabbage shredded
225g mayonnaise (replace mayonnaise with natural yogurt + lemon juice + grated black pepper for low fat version)

Mix all raw vegetables, add in mayonnaise or yogurt dressing. Add a few unsalted nuts or sultanas if you like – be flexible.

Purple Sprouting Broccoli, Potato and Cheese Soup Serves 4

Cost to make £2.85 for 4 portions = 71p per portion
Supermarket fresh soups £1.25 for 600g = 83p per portion

25g butter
225g (1 cup) onion chopped
700g potatoes cut into cubes
2½ cups boiling water
1 tbsp bouillon or 1 veg stock cube
450 g broccoli chopped
100 g cheddar cheese grated
salt & pepper

Melt butter in pan and sauté onion for 5 mins. Add potatoes, water stock and broccoli. Cover, bring to boil and then reduce heat & simmer till veg cooked, c15 mins. Blend till smooth. Add cheese gradually with stirring until melted.

Purple Sprouting Broccoli with Baked Potatoes Serves 4

Cost to make for 4 = £3.30, 83p per portion
4 potatoes baked
700g broccoli
25g butter
2 tbsp plain flour
225 ml milk
¼ tsp mustard
120g cheddar cheese grated

Steam or cook broccoli in boiling water till tender, c15mins. In another pan melt butter, add flour & stir to make smooth paste. Stir in milk bit by bit & cook over low heat, stirring continuously till thickened. Add mustard. Stir in cheese till melted. Fold in broccoli & season to taste. Serve over hot baked potatoes.
