Vegetable Cakes
When you’ve got a surplus of a vegetable and want to use up some more, these are good recipes for hiding a bit more unobtrusively……

These cakes are all very easy to make and tasty. They are oil based cakes and don’t require any fancy techniques or skills. They seem to be very forgiving so good to get the kids or novice cake makers involved. The vegetable adds moisture to the cake and they can keep for several days – if you don’t eat them !

For kids, you could mix them up in a washing up bowl or even a bucket for fun. I find the lettuces need to be massaged in by hand as they are so voluminous.

Lettuce and Walnut Loaf Cost to make £3.08 for 2 loaves (lettuce from garden)
Lettuce adds moistness. Tastes much better than it sounds !

350g sugar
175 ml veg oil
1 ½ tbsp lemon juice
4 eggs
350 g plain flour
2 tsp baking powder
1 ½ tsp bicarb of soda
½ tsp cinnamon
1 tsp salt
450 g lettuce finely chopped –that’s about 4 or 5 lettuces, a small mountain !
125 g walnuts

Whisk sugar and oil together, add lemon juice and eggs and beat well.
Fold in flour, baking powder, bicarb, cinnamon and salt.
Stir in lettuce and walnuts. Pour into greased loaf tin
Bake in preheated oven 180C for 50 mins or until knife inserted comes out clean .

Di’s Courgette Cake   Cost to make approx £2.40 for 2 loaves

Cream together 3 eggs, 1 cup vegetable oil , 2 cups sugar.
Sift and add 3 cups flour, 1 teasp baking soda, 1 teasp salt, 3 teasp cinnamon.
Add 2 generous cups grated courgette (squash the courgette down to really fill the cup), 3 teasp of vanilla essence.

Divide in 2 loaf tins and bake for 1 hour at 325 F / 160 C

Carrot Cake Cost to make £3.34 for large cake, w ithout topping £2.34 vs Tesco 6 carrot cake slices £1.64

175 g soft brown sugar
2 large eggs
120ml vegetable oil
200 g wholemeal self raising flour
1 heaped teaspoon of bicarbonate of soda
3 heaped teaspoons of mixed spice
grated zest of orange
200g grated carrot
175g sultanas
Topping : 200g Mascarpone cheese Juice of one orange 50g Icing sugar 

Whisk eggs, sugar & oil together. Sift in flour, bicarb, mixed spice. Mix then add orange zest, carrots and sultanas. Pour into oiled tin 10 x 6 inch and 1 inch deep tin (25.5 x 15 x 2.5cm). Bake at 170 C for 35 mins. Mix topping ingredients & spread over cake when cool. Baking double cake quantity with less topping is also good.
